Sabert Lewis discovered Neapolitan style pizza during a trip to New York City in 2000 and was amazed at the charred, crispy crust and the incredible flavors as a result of cooking pizza at high temperatures. In 2005, he become a certified pizzaiolo through the Vera Pizza Napoletana Association (VPN) of Naples, Italy. Determined to replicate VPN pizzas at home, he built a wood-burning oven in his backyard. Sabert spent the next few years perfecting his pizza recipes at his backyard pizza parties. With friends and family as willing test subjects, the parties were so much fun that he decided to bring the oven and his pizza to the public! Sabert started Pizza Van Go in September 2009 and is thrilled to introduce Albuquerque to Neapolitan pizza.
